I've known plenty of companies who claim to be aces at that sort of thing, but really only do a quick second-rate job with Google Ads.
How long have you been in this industry? (experience matters because SEO is not a strait forward process)If you do link building, what techniques do you use? (if they tell you directory submissions then move on)
Do you outsource any work to MechanicalTurk or Bangladesh (no offense to Bangladesh, outsourcing can be very advantageous)
Will you be able to do the coding work necessary for the project or will you hand me a nice Word file with to-dos?
Have you heard that social parameters play into the Google algorithm? How can you help with these parameters?Do you understand my goals and success metrics?What is the structure of the fulfillment department?
