Does Google de-index individual pages or entire sites?

Everyone knows that Google can de-index an entire site, but could they also just de-index specific pages that they find objectionable? Sometimes back, I was reading how Bing uses this strategy to remove overly optimized pages that get high bounce rate from the Bing search engine. These specific pages are considered irrelevant to search results anyway.

If Google warns you about a page, then they are likely to de-index that page. But, if you don't take action, they will take the entire site out of Google search.

No. Google will de-index all the website at once. However if you want you can prevent some pages of your website from being indexed, through robots.txt.
